The Secret of Spanish Style Pork in North Dakota

At TAL Farms LLC, we believe that superior flavor is engineered through conscious feed choices. Our proprietary feed mix is meticulously crafted to replicate the profile of feeds used in famed Spanish pork production with locally accessible grains. To achieve pasture-finished pork, we purchased feeder pigs from neighboring farms and provided them with pasture access for approximately three months while feeding our proprietary feed mix to create the finishing conditions necessary to achieve premium flavor. By blending oats, canola, corn, alfalfa, and grass, we work to achieve the ideal balance of fatty acids to maximize Spanish style flavor in our pork. This artisanal approach ensures that our pasture-finished pork carries a melt-in-your-mouth texture and a deep, buttery complexity.
